Tacos Al Pastor - Adobo Sauce


The hubs got a new cookbook for Christmas - I Love Bacon! Yes, I'm serious. This does not bode well for the Biggest Loser competition I'm joining with some work friends. But, I digress.

Hubs made the tacos al pastor on NYE. The adobo sauce was absolutely delish! You should definitely make it.

My recommendation is to change your meat to pork shoulder rather than pork belly. That's what we are going to do next time. The pork belly was too fatty for me. (And yes, I know that's what pork belly is. I have eaten it before. And loved it. Just not like this.)

Here is the recipe for the adobo sauce. If you'd like the complete recipe, I'm happy to email it to you. Enjoy!

Ingredients
2 tablespoons olive oil
1 Spanish onion, roughly sliced and chopped
3 cloves garlic
1 cinnamon stick
1 bay leaf
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1 can chipotle chilies in adobo sauce
10 dried guajillo chiles (stemmed, seeded, deveined)
5 cups water
1 cup pineapple juice
1/4 cup sherry vinegar

Directions
Heat olive oil in a pan over medium heat. Saute onion and garlic until translucent. Add cinnamon stick, bay leaf, oregano, cumin and chipotle. Cook for about 2 minutes. Add guajillo chiles, water and pineapple juice. Season with salt. Cook over medium heat until guajillos are tender, about 10 minutes. Set aside to cool. When cool enough, pulse in a blender until smooth. Add sherry vinegar and salt to taste.

When you cook your meat, you'll rub some on for cooking, and also bake your meat in the sauce - with more pineapple. Yum!
