How gorgeous was the weather this weekend? We spent a lot of time outdoors yesterday. My friend and I took the pup on a long walk. We met a few other Boxers along the way for some wrestling, and when we finally got home, Finley was one tired doggy! Since we spent so much time playing, we took the easy way out for Sunday dinner. Paninis for everyone!
I love a good sandwich. Only recently did I discover that there's a show on Food Network now called Sandwich King. The host is a winner of Food Network Star 7 and he's even located here in Chicago! But I digress.
Being as tired as we were (I'm sure the time change didn't help), it was panini night. Super easy. Super delish. Here are the ingredients I used for each sandwich. I don't measure when I cook, so use an amount to your liking.
Two slices of fresh sourdough bread
A little smidge of prepared pesto (I used Trader Joe's basil pesto)
Fresh mozzarella slices
Shredded chicken breast (Lazy woman tip: Use a rotisserie! Costco's are the best!)
Fresh organic baby spinach
Tomato slices
Fresh avocado slices
My favorite trick: When you butter your bread to get it ready for the grill pan, add some garlic powder or garlic salt on the outside of each slice. It makes a world of a difference!
Grill it up until the cheese is ooey-gooey and enjoy! The hubs said the only thing that would have made the sandwich better would have been bacon. Whatever.

By the way, that's not my panini in the photo since I neglect to take decent pictures. Ever. Or take them at all, for that matter. But mine looked just as good, if not better!

I don't think that's very lazy! haha. Does that make me incredibly lazy in the kitchen?? Lazy to me is when I open tortellini and heat up pasta sauce. :)
I love a good grilled sandwich! That looks delish.
The weather was so amazing this weekend, and of course we already had a ton of plans, and didn't get to properly enjoy it! Boo! The Sandwich King was my favorite when he was on Food Network star, but I've caught portions of his show, and it was awful! He made a chocolate cake shake the other day, and used an entire pint of ice cream, and his overweight kids were in the background begging him for it. It was kind of sad - those kids need some veggies, NOT a chocolate cake shake!

these look great! i agree, yesterday was the best day ever. we took the babe for a long walk all over the city. isn't it amazing how everyone is in a good mood on days like that?
I would never have thought to add avocado! Definitely adding some when I make this for lunch tomorrow :)
